I have a confession. Tom Collins are my jam this summer. I haven’t been drinking beer, but rather when I have a drink it’s been a Tom Collins (or sparkling rose). Gin is a hot commodity in the cocktail market this summer so if you haven’t been adventurous yet, now is the time. For those who say they don’t care for gin due to its “Christmas-tree flavor,” I encourage you to give this drink a chance. It will change your stance on gin.
Most people attribute Tom Collins to the Irish political activist who died in 1798 during the Irish Rebellion. However, a drink known as a John Collins has existed since the 1860s at the very least and is believed to have originated with a head waiter of that name who worked at Limmer’s Old House in Conduit Street in Mayfair, which was a popular London hotel and coffee house around 1790–1817.
Regardless of history, this is one tasty cocktail!
- 1 1/2 ounces of your favorite dry gin like Tanqueray or to change it up a bit, Hendrick’s
- 3/4 ounce fresh lemon juice (I recommend using Meyer lemons)
- 1/2 ounce simple syrup (to change the flavor, you can use infused simple syrups)
- 3 ounces club soda or sparkling water
- Lemon wedge for garnish
- Squeeze half a lemon into a collins glass, add simple syrup and gin.
- Stir and fill with ice.
- Top with club soda and garnish with a lemon wedge.
